Recipe | Crunchy Taco

Before I learned how to really cook, we sometimes indulged in those few handy dandy Hamburger Helpers. Yeah, we all know them. Bad for us but somehow still tasty. My favorite happened to be Hamburger Helper’s Crunchy Taco. The concept itself is fairly easy. Ground beef, taco seasoning, rice, and chips. Well, I decided to put this to the test and made my own crunchy taco! It turned out absolutely delicious and I can’t WAIT to eat it again.

Crunchy Taco


Ingredient List

  • 1 pound lean, ground beef.
  • ½ small white onion.
  • 2 teaspoons chili powder.
  • 1½ teaspoons paprika.
  • 1 teaspoon onion powder.
  • ½ teaspoon salt.
  • ½ teaspoon garlic powder.
  • ½ teaspoon ground cumin.
  • ½ teaspoon oregano.
  • ¼ teaspoon black pepper.
  • ¼ teaspoon cayenne pepper.
  • ¼ teaspoon red pepper flakes.
  • 1 10 ounce can Rotel.
  • 2 cups chicken broth.
  • 1 cup white rice.
  • 1 cup shredded cheddar cheese.
  • 1 bag tortilla chips.


  • In a large non-stick skillet over medium-high heat, brown ground beef and onion. Drain any excess fat.
  • Add all seasonings, Rotel, and broth. Bring to a boil.
  • Lower heat to low and cover. Simmer 20 minutes until almost all liquid is absorbed.
  • Add cheese and melt for about 5 minutes.
  • Break up tortilla chips and add to pan. Mix and enjoy!
