I actually first came across this recipe in high school when my school served it for lunch. Surprisingly, my school actually didn’t make complete garbage food, haha. A few years later I came across the KFC chicken bowl but I didn’t really care for it. When I was pregnant, all I wanted was homemade chicken bowls, even at 2 in the morning. So please enjoy one of my favorites!
Mashed Potato Chicken Bowl
1 can of corn.
1 packet of country gravy.
1 bag of popcorn chicken.
2 pounds baking potatoes.
2 tablespoons butter
1 cup milk.
1 bag 2 cup shredded cheddar cheese.
Salt & pepper.
Wash, peel, and cut potatoes.
Boil a large pot of water. Add potatoes and cook until tender but still firm, appx 20 minutes.
Mash potatoes using a potato masher or electric beater, slowly blend milk and butter into potatoes until desired texture.
Salt and pepper to taste.
Prepare gravy, corn, and popcorn chicken as per instructions.
In a small bowl, add mashed potatoes, corn, chicken, gravy, and cheese.
Serves about 4.
